The temperature plays a significant role in terms of storing wines. Heat and light must be avoided at all costs, as the wine begins to mature faster at temperatures above 21 degrees Celsius. In addition, each wine will lose aromas if stored at temperatures over 25 degrees Celsius, which can turn every good wine into unenjoyable drinking experience.
The recommended temperature is 7 to 18 degrees Celsius, with the ideal temperature at approx. 12-13 degrees Celsius. It must also be ensured that the storage temperature remains constant, which can be an issues due to the changing weather temperature in-between the seasons.

The storage can have an effect on the taste and quality of the wine, if it is stored in a cellar at approx. seven degrees Celsius during the winter and 20 degrees Celsius during the summer. Light and especially UV radiation accelerate the natural maturation of each wine and thus limit the shelf life of each bottle. Therefore wine has been stored in colored bottles for centuries, which serve as light protection and ensure that the wine is not exposed to too much UV light. This is one reason why red wine is rarely found in white glass bottles. The stained glass (green or brown) blocks more UV rays, but cannot repel UV completely. Conventional light such as light bulbs are harmless on the other hand.

The length of storage and quality is associated to the humidity of the storage room or areas, since dry air desiccates the cork. Therefore its recommended that the humidity of the storage is held at approx. 50-80 percent. For short storage periods it is sufficient if the air humidity is approx. 30 percent.

If the wine is stored at too low a humidity (< 50 percent), it can oxidize or evaporate (see wine defect). Too much air can desiccate the cork resulting in the cork no longer sealing the bottle letting in air. The condition of the cork has an effect on the shelf life of each wine. However, if the wine is stored at a humidity of more than 80 percent, mould can form on the corks. And if the air humidity is around 90 percent, mildew stains can form on the wine labels.
There are simple tricks to avoid these situations. For example, if the air is too dry, a bowl of water can provide moisture, and if the air is too humid, a dehumidifier can extract moisture. The humidity play a crucial role in storing wines properly and should be checked regularly.

Until a few years ago, the usual way of storing wines that were sealed with natural cork was lying down. This prevents the cork from drying out, as it is keeps it wet from the inside.
For some time now, however, there have also been experts who advise storing the bottles standing. Champagnes have been stored vertically by specialists with the argument that the alcohol and carbonic acid attack the cork.

It is therefore advisable to observe the following: Wines sealed with natural cork can be stored standing for one to two years, since the moisture inside the bottle keeps the cork wet. After this period, however, it is advised to store wine with natural cork horizontally. If wines are sealed with a plastic cork, glass or screw cap, they can also be stored vertically.

Cellars are the moste suitable storage areas for wine, since they are underground. The cool and relatively constant temperature are perfect condition for wines. If the cellar is too damp, an air dehumidifier can be used. Wines can also be easily stored at home, if they are kept away from heat, frost and sunlight.
